Ingredients

2 pounds black hog pork belly, sliced 1/4 inch thick

1 tablespoon red chile pepper paste
-
1 tablespoon red chile pepper flakes
-
1/2 tablespoon low sodium soy sauce, check for gluten free labels if needed

1 tablespoon rice cooking wine
-
1 tablespoon plum extract (if using, or 1/2 tablespoon sugar)

3-4 cloves garlic, minced or grated
-
1 teaspoon ginger, minced or grated
Instructions
Start with the marinade. In a large bowl mix together red chile pepper paste, red chile pepper flakes, soy sauce, rice cooking wine, plum extract (if using) or sugar, garlic, and ginger.
Add the pork to the marinade. Cover and store in the fridge for at least 30 minutes. Can be store in the fridge for 2-3 days.
Remove pork from fridge and bring to room temperature. Heat a heavy bottom high sided large skillet over medium high heat. In a single layer, cook the pork turning 2-3 times until golden brown, about 4-6 minutes.
Serve with scallion kimchi or young napa cabbage kimchi and enjoy with a glass of wine. Yummm…..y!
