Japchae Bokgeum Korean Stir-Fried Swee Potato Noodles With Spinach,Beef And Black Mushroom

Japcha Korean Stir-Fried Sweet Potato with Vegetable  잡채 볶음

   prep time : 15 MINUTES    cook time : 40 MINUTES    total time : 55 MINUTES

   

   yields :  2 AS A MAIN, 4 AS A SIDE                                           

 

 

Ingredients

 

  • 12.7 ounces dang myun (sweet potato noodles)

  • 4 ounces sliced beef, marinated

  • ½ cup black mushroom, cut into a bite size

  • 1 bunch spinach, cook and cut into half

  • ½ large white onion, sliced

  • 2 cups carrot, sliced thin or shredded

  • 2 cups garlic chives(green buchu), cut into matchsticks

  • 4-5 colves garlic, minced or crushed

  • 1 green pepper and red pepper, sliced thin ( optional,instead of carrot, onion and garlic chives)

Sauce for dangmyun (noodle)

  • 1/3 cup soy sauce

  • ¼ cup sugar

  • ¼ cup water

Sauce for beef and black mushroom

  • ½ tablespoon soy sauce

  • ½  teaspoon cooking wine

  • 1-2 cloves garlic, minced  

  • 1-2 pinches black pepper

Sauce for japchae

  • 2 tablespoons soy sauce

  • 1 tablespoons sugar

  • 1 teaspoon sesame oil

  • 1 tablespoon sesame seed

 

 

Contructions

 

Add water to a large pot. When it’s bubbling, add dangmyun for

about 5 minutes until look clear noodles and drain in a colander with

drizzing cold water. Set aside until mix together soy sauce, sugar

and water in to a large skillet. Heat it over medium heat until boiling

for about 2-3minutes. Turn off heat, add dangmyun into sauce mix

well and drain in a colander. Dangmyun looks shine and clear brown

color. Set aside.

 

Beef and black mushroom

In a small bowl mix together soy sauce, cooking wine, garlic and

black pepper. Add beef and black mushroom into seasoning mix well

and set aside.

 

A pinch of salt to a boiling water, add washed fresh spinach into boiling

water for 1-2 minutes to cook slightly. Drain in a colander with

drizzing cold water. Squize it tight and cut into half. Set aside.

 

Carrot,onion and garlic chives (or green pepper and red  pepper)

Heat a large skillet over medium heat, add drizzing of sesame oil.

Once hot, add sliced carrots, onions and garlic chives season with

salt and pepper. Until fry carrot and onion cooked in halfway . Set aside.

 

Japchae 

In a small bowl mix together soy sauce, sugar, sesame oil and

sesame seeds.

 

Heat a large skillet over medium heat, once hot, add marinated beef

and black mushroom fry until beef gets golden. Turn off  the heat.

Combine into same large skillet japchae, spinach,vegetables and

drizzling sauce over and mix well.
