 Scallion Kimchi With Anchovy Sauce

The fermentation process makes the scallions milder and the combination of sweet, salty and spicy enhance the flavor.

I can eat this kimchi with everything, but my favorite is the hangover soup - pa kimchi combo. Somen noodles with anchovies broth also serves as a nice base for this kicked-up side dish.
